Coffee’s flavor comes from roasting the beans.

Unroasted beans are generally not savory to the palate. Roasting, however, causes a chemical reaction that turns the beans’ carbohydrates and fats into aromatic oils, burn off moisture and carbon dioxide, and alternately break down and build up acids, unlocking the characteristic coffee flavor.
